Wisconsin cheesemakers began producing Cheddar in the mid 1800’s, and by 1880, more Cheddar was produced in Wisconsin than any other cheese variety. Today, Cheddar accounts for 26 percent of the cheese made in the state, making Wisconsin the leader in U.S. Cheddar production.
Wisconsin cheesemakers make a wide range of Cheddars, varying in style, flavor and age. While mild Cheddar is firm, medium Cheddar is slightly creamier with a fuller flavor.
