Wisconsin Feta Cheese

Known in the U.S. for its staring role in a Greek Salad, Feta Cheese was first made in Greece from sheep’s or goat’s milk. Cheesemakers refer to this Greek classic as “pickled” because of the process of curing the cheese in brine (a salt and water mixture) for several months. The brine preserves the cheese for approximately six months longer than most fresh cheeses and adds an extra salty flavor.

Feta is also famous for its chalk white appearance and firm, crumbly texture. Its flavor is tart and salty, but the salt content can be reduced if it is soaked in cold water or milk before serving. For cooking, Feta browns well and sautés without melting.
