Delicious on sandwiches or served in soups or tarts, Swiss is one of the most versatile cheeses available. In the Middle Ages, Swiss was produced in 200-pound wheels to avoid a Swiss government tax placed on the number of cheese pieces produced, rather than the weight. American cheesemakers modernized Swiss cheese production and made it possible to produce rindless Swiss cheese in blocks.
Wisconsin Swiss has a mellow, buttery, nutty flavor with characteristic dime-sized holes. It pairs deliciously with apples, grapes and pears or with fruity wines such as Riesling or red wines such as Merlot and Cabernet Sauvignon.
