Peppered Bacon BLT

A twist of the tasty BLT—griddled flatbread slices filled with Wright® Brand peppered bacon, crispy green leaf lettuce, mayonnaise, and Fresh Chow-Chow Relish made with diced tomatoes, red onions, red and yellow bell peppers, and jalapenos to give your old favorite a new kick.

INGREDIENTS QUANTITY METHOD
Wright® Brand Natural Smoked Peppered Bacon, Bulk, Regular, 6 Slices per inch (#401223-616) 60 each Place the bacon on parchment lined sheet pans. Heat in a preheated convection oven at 350°F for 20 minutes or until srisp and internal temperature reaches 160°F. Transfer to an appropriate container. Cover and hold hot above 135°F.
Fresh Chow-Chow Relish (Approximate Yield: 24 oz., 2 oz. portions) 12 each Fresh Chow-Chow Relish

1. Combine the vinegar, white sugar, salt, and black pepper in a nonreactive saucepan and whisk to blend; simmer over low heat until the sugar has dissolved. Remove from heat, transfer to an appropriate container and refrigerate at or below 40°F until mixture reaches 40°F or below.
2. Blanch the red onion, bell peppers, and jalapeno peppers in boiling water for 30 seconds; drain immediately.
3. Add the blanched vegetables to the vinegar mixture and stir to blend. Cover and hold at or below 40°F for 2 hours.
4. Drain the pickled vegetables. Combine with the tomatoes and stir to blend. Transfer to an appropriate container. Cover and hold at or below 40°F.
Apple cider vinegar 8 ounces
White sugar 1 ounce
Kosher salt 1 teaspoon
Black pepper, coarse ground 1 teaspoon
Red onion, fresh, 3/8” dice 6 ounces
Red and yellow bell pepper, fresh 3/8” dice 6 ounces
Jalapeno pepper, fresh, seeded, 1/4" dice 2 Tablespoons
Tomatoes, fresh, seeded, 3/8” dice 12 ounces
To Assemble To Assemble A Single Serving

1. Place 2 slices of griddled flatbread on a flat work surface. Spread 2 tablespoons of mayonnaise on the bottom slice of the flatbread.
2. Top with 1 lettuce leaf, 5 strips of Wright Brand Peppered Bacon, and 2 ounces of Fresh Chow-Chow Relish (see recipe). Close the sandwich with the top slice of flatbread.
Black Flatbread, 4” x 7”, griddled until golden, warm 24 each
Mayonnaise, commercially prepared 12 ounces
Green leaf lettuce leaves, fresh, 1/2 ounce each 6 ounces
