New Years Eve Smoked Salmon

INGREDIENTS

| McCain Homestyle Babycakes MCF03758 | 15 oz. or 24 | Smoked Salmon | 8 oz. |
| Fresh Dill, chopped | 1 tbsp. |
| Capers, chopped | 1 tbsp. |
| Coarse Black Pepper | 1 tsp. |
| Red Onion, minced | 2 tbsps. |
| Hard-Boiled Eggs, chopped | 2 each |
| Cream Cheese | 1/4 cup |
| Sour Cream | 1/4 cup | Lime Zest | 1 tbsp. |
PREPARATION
- Arrange the Babycakes on a sheet pan and bake according to the instructions on the package until golden brown, set aside.
- Chop the smoked salmon with a very sharp knife into ¼ inch pieces, place in a bowl and add the dill, capers, and black pepper. Toss to combine and set aside.
- In a separate bowl, combine the cream cheese and sour cream; fold in the red onion and lime zest, set aside.
- To serve: Spread about 1 ½ tsp of the cheese mixture on each Babycake, then place a tsp of the salmon mixture on top of the cheese. Top with a pinch of the crumbled hard-boiled eggs. Garnish with a sprig of dill and serve.
