New Years Eve Smoked Salmon

INGREDIENTS

INGREDIENT QUANTITY
McCain Homestyle Babycakes™ MCF03758 15 oz. or 24
Smoked Salmon 8 oz.
Fresh Dill, chopped 1 tbsp.
Capers, chopped 1 tbsp.
Coarse Black Pepper 1 tsp.
Red Onion, minced 2 tbsps.
Hard-Boiled Eggs, chopped 2 each
Cream Cheese 1/4 cup
Sour Cream 1/4 cup
Lime Zest 1 tbsp.

PREPARATION

  1. Arrange the Babycakes on a sheet pan and bake according to the instructions on the package until golden brown, set aside.
  2. Chop the smoked salmon with a very sharp knife into ¼ inch pieces, place in a bowl and add the dill, capers, and black pepper. Toss to combine and set aside.
  3. In a separate bowl, combine the cream cheese and sour cream; fold in the red onion and lime zest, set aside.
  4. To serve: Spread about 1 ½ tsp of the cheese mixture on each Babycake, then place a tsp of the salmon mixture on top of the cheese. Top with a pinch of the crumbled hard-boiled eggs. Garnish with a sprig of dill and serve.
