Savory Chicken and Apple Pot Pie

Savory Chicken and Apple Pot Pie
Ingredients:
¾ cup Chopped Onion
2 tbsp. Butter
1 tbsp. Olive Oil
¼ cup All Purpose Flour
½ tsp. Dried Thyme
2 cups Chicken Broth
5 cups Cubed Cooked Chicken
1½ cups Lawrence Foods Deluxe Apple Filling (Items 126287, 122001 and 121086)
Salt and Pepper
Unbaked Pie Crust
Directions:
In a large sauce pan, cook the onion, butter and olive oil over medium heat for 15 minutes. Stir in the flour, sage and thyme. Reduce the heat, and cook for 10 minutes until the mixture is a light caramel color. Whisk in the chicken broth. Whisk continuously, bringing the mixture to a boil. Reduce the heat, and simmer for two more minutes. Remove from heat, and stir in the cooked chicken and Lawrence Foods Deluxe Apple Filling. Season with salt and pepper. Transfer the chicken over to individual ramekins or 4” pie tins. Roll out your pie crust, and cover each ramekin. Crimp the edges to seal. Cut small vents into the tops of each crust. Bake at 400°F for 30 minutes or until the crusts are golden brown. Yield: 8 Pot Pies
