Caribbean and Lobster Potato Salad

INGREDIENTS & INSTRUCTIONS

Seasoned potato salad with lobster chunks garnished with watercress, orange segments and hard boiled eggs, drizzled with an Orange French dressing.

QUANTITY & INGREDIENTS
Classic Gourmet® Country Dijon Honey Mustard Dressing 4 oz.
Classic Gourmet® Select Kahlena French Style Dressing 10 oz.
Mayonnaise 6 oz.
Lemon Juice 1 tbsp.
Red Potatoes, diced, cooked, cooled 1 ½ lbs.
Parsley, finely chopped 1 tbsp.
Cilantro, finely chopped 1 tbsp.
Kosher Salt ½ tsp.
White Pepper ½ tsp.
Butter/Bib lettuce, separated 15 oz.
Lobster Tail meats, chunked 20 oz.
Watercress 5 oz.
Orange segments 5 oz.
Egg, boiled, cooled, sectioned 5 oz.
INSTRUCTIONS
1. Combine honey mustard dressing, mayonnaise, lemon juice, herbs and seasoning. 2. Mix thoroughly and adjust salt and pepper. Add potato and mix. 3. Plate bib lettuce and top with seasoned potatoes, then lobster. 4. Garnish with orange segments, watercress and egg wedges. 5. Drizzle with orange French dressing.
